My friend cooked squash soup

Oh yummy. I had to make food for a friend recovering from cancer surgery, and she requested squash soup, so I started with one of the recipes from the Moosewood cookbooks, but did it my own way, and is it good!

I roasted (400 degrees) in a pan oiled with olive oil:
a peeled, seeded, and cubed butternut squash with
2 seeded and cubed macintosh apples,
1 cubed red sweet potato,
2 cubed big carrots,
1/2 of a big vidalia onion

till everything was tender (the carrots were not as tender as the squash & potatoes)
then pureed it with some fresh farm apple cider in my blender

and heated it on the stove with some fresh pepper-mix and a little bit of salt.

OMG! It's sweet because of the apples & cider, but it's really good.
